I use my MT32-pi thru wifi networks with my mac and the built-in network midi setup. I found some third-party options for Windows but I haven't tried myself.

Yes the menu change the volume on all output (HDMI, Digital audio and Analog with IO Board). It will lower the volume but the max volume will be topped at line level. If you need to drive a good pair of headphone with higher impedance you should check for a headphone DAC with a dedicated volume control.

In that case you will have to rely on the volume control in the Mister menu.

If the usb power is a issue, since it's a regular 5volt input, you could use your main Mister power supply with a Y splitter. Also, depending of your digital IO addons you will need a Toslink to SPIDF adaptor or cable:

I don't own that particular model. Depending of your mister USB hub, if you got one of those add-on board for your MisterFPGA it shouldn't be a issue.

Most common issue is the USB cable, the audio feed is very very length sensitive. You need a very short USB3 cable, everything over 12 inch screwup the I2S audio connection. I think you should avoid arcade core for now, those games want to kill the player as fast as possible. I don't have any specific suggestions, but you should start with console like the Atari or Coleco Vision, also old computer core like the MSX or C64 got more of educational and slow pace games than consoles.

For what I know, the HPS (ARM cpu) of the Cyclone V doesn't have a direct access to video and sound coming out of the FPGA Core, making hard (if not impossible) to output sound on any USB/Bluetooth audio interface beside Fluidsynth/MT32 sounds used with some computer cores.
