Just a small update. I was unsuccessful in getting the cable I originally purchased to work. I went back to Adafruit and they actually sell the individual pieces for HDMI male and female connectors and ribbon cables similar to what thorr suggested above. I used one of these in my case: https://www.amazon.com/gp/product/B07DHJSSCL/ That particular one is out of stock but you can probably find other equivalent ones.
