Road Rash doesn't have a 2-player mode. Where do you see this option?
Things will either work or not work. If your current RAM is working ok, the "upgrade" won't do anything at all.
You won't be able to run direct video on most VGA monitors. They don't support 15kHz (240p).
I guess you are using an NTSC console. You need an RGB connection.
So you are running some janky patched game? 60hz has a lower resolution than 50hz, so I guess the patch has to crop the frame buffer, since it's impossible to fit on a 60hz output.
I have bought lots of cables from retrogamingcables.co.uk. I've always been happy with the quality.
Upgrading the RAM would not improve PSX. It will however enable some of the larger Neo Geo games to work correctly.
There's also the multisystem from RMC. It's a well built "consolised" version with a printed shell. I like it a lot.
