Wonder if there is any cores becoming available for the Mortal Kombat titles? Os there any way I can help?

Neither the CPU nor the sound board have open source implementations right now.
Probably the best way to help would be to get in touch with developers who are interested and offer to loan/donate arcade boards for research.

The "CPU" on these is a beast, too. It was designed to be a graphics coprocessor and was used on some high-end graphics cards, but it has enough general-purpose instructions that a separate host CPU isn't strictly necessary.

Jotego (the developer of CPS1 core) has mentioned on twitter that he is interested in developing a core for Mortal Kombat. He hasn't started anything as of yet but the best thing you can do to help out is become a patron of his. I wish I still have my MK1 board.. used to be able to buy them on Ebay for $50 all day, every day.
