Anyway to rectify this or recommendation for a cable?
Basically I bought a multi scart adapter from otaku so it’s very good quality,
I’ve tried both my cables and I get the above, barely see the screen totally washed out.
Cables work fine on the tv directly, I thought buying a good switch would sort this but to no avail.
Appreciate some advice! I’ve tried switching the jumper from 3.3 to 5v but no difference

In order to do a SCART connection for MiSTer requires a resistor on the SCART line or it's not safe. I would refrain from using whatever you are using to achieve this signal chain, until you hook up a multimeter and test the resistance and voltage on the SCART line.
