Top of my list to round out the classic era would be:

Sega Astro Blaster
Tehkan Star Force
Salamander
Stargate Defender II
I would love to play some Ninja Gaiden
That would really be a win. They have it in Mame now, maybe with that crazy setup that lets you run a core that shots mame on to the mister from a PC..
Yes you can stream it from mame, the fun stuff is that mame got the Vector rendering with a few tweaks absolutely correct. I have a setup with analog sticks and did a little bit of post processing tinkering, and I got the vector feeling correct thanks to high res monitors nowadays, which leads to one of MiSTers biggest deficits, the rendering of Vector graphics is absymal, which means even if someone ports Star Wars you will not get the correct feeling because of MiSTers lousy handling of Vector graphics, a problem which also plagues the Vectrex core among others!
As others have stated, this is an fpga issue itself, but very likely the rendering itself comes from the MiSTer FPGA framework, so if someone really tries to tackle the problem it very likely is solvable!
With respect, this is the sort of reaction non-technical people have to many things they desire.

Unfortunately the MiSTer framework (i.e. the Linux side) does not have any rendering capabilities of it's own - even the menu system is rendered by the FPGA! The vector cores on MiSTer essentially have an extra load of FPGA code added to perform hardware rasterization, which is complicated and does not scale up to higher resolutions easily. It's also tough to perform any kind of image processing to add blur/fade effects to try and make things look nicer, just due to the relatively low clock speeds the DE-10 can achieve...
Maybe one day someone will engineer a solution, but it'll definitely take a lot of work!
Only a vector monitor will produce crisp lines. Any rasterization is going to be limited to all of the below:
1) The resolution of the monitor
2) The maximum output resolution of the driver circuitry (on MiSTer, this is pretty low)
3) The ability for a rasterizer to take the input vector values and translate them to the target grid, and how it deals with intensity, speed of movement, and intensity while drawing lines (i.e. the "brains" within the rasterizer)
4) The display refresh timing (versus redraw timing, as these are not "per frame" systems), and how vector decay would take place.
Unless a new FPGA system comes out that can drive 4K, the next best thing is to hope that 4K scalers might one day be able to implement such a rasterizer. At least they would be capable of processing 4K output (but then, we would still need to determine how to get the input data to them).
I expect that there would be a lot of tunables (so settings-per-game would be necessary), and there would still be flicker due to the refresh rate.
Said it before but love to see Wardner / Pyros in the US by Toaplan on the mister , hopefully attrac17 might do it one day

Btw. Just as reference on what is possible on modern monitors with proper post processing here is a video of Star Wars on Mame with Vector Post processing, more or less the result I have on my 4k monitor as well this is so close to the real machine it is eery:
That does look nice, though still not the same, a bit too perfect. Also, you need and OLED HDR display to get close to the contrast of a real vector monitor, it looks like fireworks. You cannot really properly emulate a monochrome vector display, as that not only doesn't have pixels, but also no shadow mask.

It would be cool if the user port could send info to an analog board and then mix digital and analog together. I´ve seen some articles about Field Programable Analog Arrays and the prices weren't as high as I expected.
Another option could be a DIY board with some opamps and connectors for changing capacitors, resistors to cover some common schematics.
And another one using an analog synthesizer with MIDI input and send the sounds through MIDI.
The other day I played with T2 The arcade Game in the original cabinet and noticed there was a muzzfle flash everytime you´re hit. With a mirror and the pepper´s ghost illusion was really nice and gave the game some charm. It would be interesting if the user port could be used to trigger external signals for motors, lights and other things. To act as a direct replacement in original cabinets or to implement custom cabinets for "taikan" games.
Nintendo Space Firebird is another classic out there on the fringes.
Unusual shooter with a curved play track, bombs with shrapnel, multi-hit aliens, warp mode.
It is a very nice variation on the Galaxian / Galaga theme if you haven't played it.

I know they wouldn't be easy, but I'd love to see some of the classic laserdisc games. Most or all of the chips already have FPGA implementations, and the games are very well documented--my M.A.C.H.3 cabinet still has its original service manual with complete circuit diagrams for the entire machine--but the video would need to be streamed from the .CHD files instead of from the disc. The discs are slowly giving way to laser rot, and working players are getting harder to find. The Dexter board, while cheaper than a disc and player, is rather expensive at around $600 shipped without any licensed content.
Been a lot of good cores ported over the past couple of years. For me I think these would be good additions:

I second this. I remember few years back that dragon's lair was in the works. Haven't heard much about it lately.

I would like to be able to play HOLE LAND on the fpga by the Spanish company Tecfri, a classic machine from Spain and Japan that was very addictive in my childhood.
The Bagman / Le Bagnard games would be cool too! I just got a Super Bagman arcade PCB. Needs a touch of work, but looking forward to it.

I haven't been playing on the MiSTer for a bit due to too many house projects, and it's been a while since I thought about playing these games. Picking up the arcade boards is what reminded me.
