Edit: Ah, I see where he said it now, but if you keep reading, @alexoughton did seem to figure it out, and as mentioned I was able to get it working with SDD653 using his posted settings.
So is Rayman working?

Alright, so I tried Rayman in my VHD with UniVBE and now it actually doesn't show a bunch of random characters on the screen anymore and I get the blue bar at the top that says "Rayman (EU) v1.12" with a blinking cursor. Unfortunately, the game just hangs at the blinking cursor
So...kind of progress? But still no dice.

Found out that a rather obscure game, Surface Tension from 1996, would NOT run actually without this
Without UNIVBE set:
