Not an exhaustive list, but here the consoles I knew that ether supported 4 or more players
Astrocade - 4 Players, no multitap needed
Atari 2600 - Normally 2 but up to 4 can play using the paddles
Atari 5200 - 4 Players, no multitap needed (poorly utilized)
NES/Famicom - 4 Players with adapter
Sega Master System - 4 Players with adapter
SNES - 3 to 5 (depending on the adapter used)
PC Engine - 5 Players (only one without Turbo Tap)
Sega Genesis - 4 Players with adapter
Special case, not really supported in core but can be done with the SNAC.
Gameboy/Gameboy color - must use Snac with the GB Link connector, the Nintendo Gameboy Four 4 Player Adapter DMG-07 Link Cable and 3 more Game Boy "devices ". There also 2 GB titles that require the Super Game Boy, an SNES and a SNES Multitap for 4 player game play.

Noted I should have specified both Tested in MiSTer, AND supported over USB, as opposed to SNAC. Thanks!
Even if you don't find it relevant, I am sure other readers would find it very useful.
So I felt it was worth mentioning, and I would of listed it regardless.

I assume with Jotego's CPS2 core we will have Dungeons & Dragons: Tower of Doom and Dungeons & Dragons: Shadow over Mystara. These are my kid's favorite 4 player games
